Ingredients

  • 4 tbsp butter
  • 1 tbsp oil
  • 2 None red onions, thinly sliced
  • 2 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • 1 loaf soft Italian bread, halved lenthwise
  • 6 None slices prosciutto, chopped
  • 2 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 2 None garlic cloves, finely chopped
  • 5 1/4 oz mozzarella, thinly sliced
  • 3 cups arugula

Method

  • Preheat oven to 400°F. Line an baking sheet with foil. Heat butter and oil in large skillet. Saute onion for 8-10 mins, until soft. Stir in sugar and vinegar. Cook, stirring occasionally, until caramelized (about 10 mins). Season to taste.
  • Place bread halves on a prepared baking sheet (cut-side up). Spread evenly with caramelized onion and prosciutto slices.
  • Heat oil in a large skillet on high. Saute mushrooms and garlic for 4-5 mins, until soft. Spoon mushrooms over onions and prosciutto; top with mozzarella. Bake for 5-10 mins, until cheese melts and bread is crisp. Serve topped with arugula.
