- 5 slices bacon
- 3 cloves garlic, minced
- 3 medium onions, diced
- 1 green pepper, diced
- 3 stalks celery, diced
- 2 large cans baked pea beans
- 2 pkg. fordhook limas, cooked
- 2 cans dark red kidney beans, drained
- 1/2 c. ketchup
- 3 Tbsp. vinegar
- 1 Tbsp. dry mustard
- 1 tsp. salt
- 1/4 tsp. pepper
Method
- Dice bacon and fry.
- Remove bacon and drain on paper towels. In bacon fat saute garlic, onion, green pepper and celery.
- Add and mix well the rest of the ingredients, except bacon.
- Put bacon on top.
- Bake in 350° oven for 45 minutes or until beans are good and hot.
- Bake in a 2-quart bean pot.
- Serves 12.
