Ingredients

  • 5 slices bacon
  • 3 cloves garlic, minced
  • 3 medium onions, diced
  • 1 green pepper, diced
  • 3 stalks celery, diced
  • 2 large cans baked pea beans
  • 2 pkg. fordhook limas, cooked
  • 2 cans dark red kidney beans, drained
  • 1/2 c. ketchup
  • 3 Tbsp. vinegar
  • 1 Tbsp. dry mustard
  • 1 tsp. salt
  • 1/4 tsp. pepper

Method

  • Dice bacon and fry.
  • Remove bacon and drain on paper towels. In bacon fat saute garlic, onion, green pepper and celery.
  • Add and mix well the rest of the ingredients, except bacon.
  • Put bacon on top.
  • Bake in 350° oven for 45 minutes or until beans are good and hot.
  • Bake in a 2-quart bean pot.
  • Serves 12.
