Ingredients
- 1 3/4 c. strong coffee
- 1/4 c. dark rum
- 5 (1 oz.) sq. unsweetened chocolate
- 1 c. butter
- 2 eggs
- 2 c. sugar
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. baking soda
- 1/8 tsp. salt
Method
- Place coffee and rum in a pan; bring to a simmer.
- Add chocolate and butter.
- Cook, stirring occasionally, until all are melted.
- Remove from heat.
- In a large bowl, beat the eggs. Gradually beat in sugar until mixture is thick.
- Beat in vanilla and chocolate mixture.
- In a separate bowl, stir together flour, baking soda and salt.
- Beat into chocolate mixture.
- Bake in a greased and floured tube pan at 275° for 1 1/2 hours.
- Transfer to rack to cool overnight.
