Ingredients
- 2 stalks celery, chopped
- 1 granny smith apple, peeled and chopped
- 1 red bell pepper, chopped
- 3 large chicken breasts, skinned and boned
- 6 -8 tablespoons fat-free Miracle Whip
- 2 tablespoons barbecue sauce
Method
- Combine chopped vegetables and apple in medium bowl.
- Fill the bowl with cold water; set aside in fridge.
- Grill chicken (A George Foreman Grill works great.)
- Shred chicken with a fork and knife.
- Drain off water well from the apple and vegetable mixture.
- Combine chicken and apple-vegetable mixture in a large bowl.
- Fold in Miracle Whip and BBQ sauce.
- Mix until everything is coated.
