Ingredients

  • 2 stalks celery, chopped
  • 1 granny smith apple, peeled and chopped
  • 1 red bell pepper, chopped
  • 3 large chicken breasts, skinned and boned
  • 6 -8 tablespoons fat-free Miracle Whip
  • 2 tablespoons barbecue sauce

Method

  • Combine chopped vegetables and apple in medium bowl.
  • Fill the bowl with cold water; set aside in fridge.
  • Grill chicken (A George Foreman Grill works great.)
  • Shred chicken with a fork and knife.
  • Drain off water well from the apple and vegetable mixture.
  • Combine chicken and apple-vegetable mixture in a large bowl.
  • Fold in Miracle Whip and BBQ sauce.
  • Mix until everything is coated.
