Ingredients
- 2 lb. fresh peas
- 1 Tbsp. dry minced onion
- 1 tsp. sugar
- 1/2 tsp. salt
- 1 Tbsp. mandarin peel in syrup
- 1 sprig fresh mint
- 1 Tbsp. butter
Method
- Shell peas and combine with onion, sugar, salt, mandarin peel and mint.
- Add a small amount of water, cover and cook until barely tender.
- Water should be evaporated when peas are done. Remove mint sprig, toss peas with butter, serve at once.
- Serves 4.
