Ingredients
- 1/2 c. olive oil
- 1/4 c. packed, minced, fresh mint
- 2 bay leaves, crumbled
- 1/2 c. dry red wine
- 4 large garlic cloves, minced
- 1 (5 lb.) leg of lamb, boned and butterflied
Method
- Mix the first 5 ingredients in a large baking dish.
- Season with generous amount of pepper.
- Add lamb, turning to coat.
- Cover and refrigerate overnight.
