Ingredients

  • 2 onions, chopped
  • 1 courgette, diced
  • 3 carrots, diced
  • 2 garlic cloves
  • 1 vegetable stock cube
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 400 ml passata
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons sugar
  • 1 pinch salt
  • 12 teaspoon ground pepper
  • 50 g frozen peas
  • 50 g spaghetti (broken into bits)
  • 500 ml boiling water
  • 2 tablespoons olive oil
  • 28 g fresh basil, torn

Method

  • Heat oil in pan add onions and sweat for 5 minutes add remianinbg vegetables and garlic and fry for a furtehr 5 minutes.
  • add all remaining ingredients and except the basil, bring to boil, turn heat down and simmer for 20 minutes.
  • tear basil and add just before serving.
