Ingredients

  • 1 (9 ounce.) pkg. mincemeat
  • 1/4 c. brandy
  • 3 c. unsifted flour
  • 1 tbsp. baking pwdr
  • 1 teaspoon salt
  • 1 c. mashed ripe bananas
  • 1/2 c. dark corn syrup
  • 1/2 c. lowfat milk
  • 1/4 c. sugar
  • 1/4 c. corn oil
  • 1 egg

Method

  • Grease and flour a 9x5x3 inch loaf pan; set aside.
  • Break up mincemeat in a small bowl; add in brandy and soak till soft.
  • Stir together flour, baking pwdr and salt; set aside.
  • Beat together bananas, corn syrup, lowfat milk, sugar, corn oil and egg in a large bowl.
  • Beat in mincemeat.
  • Fold in flour mix.
  • Turn into prepared pan.
  • Bake in preheated 350 degree oven for 1 1/2 hrs.
  • Cold on wire rack for 5 min.
  • Remove from pan cold completely.
