Ingredients

  • 1 stalk celery, sliced
  • 1 medium onion, chopped
  • 2 Tbsp. butter
  • 2 c. milk
  • 1 c. quick cooking rice
  • 1 1/2 c. diced, cooked turkey
  • 1 can cream of mushroom soup
  • 1 c. herb-seasoned stuffing mix
  • 1 c. shredded Cheddar cheese
  • 1 (4 oz.) can green chili peppers, rinsed, seeded and chopped (optional)

Method

  • In a 2-quart micro-safe casserole, combine celery, onion and butter.
  • Micro-cook, covered, on High for 2 to 3 minutes or until onion is tender.
  • Add milk.
  • Micro-cook, covered, on High for 4 to 6 minutes or until steaming and foamy, but not boiling.
  • Stir in uncooked rice.
  • Let stand, covered, 2 minutes.
  • Stir in turkey, soup, stuffing mix, 1/2 cheese and if desired, chili peppers. Micro-cook, covered, on High for 5 to 7 minutes or until heated through, stirring once.
  • Sprinkle with remaining cheese.
  • Let stand until cheese is melted.
  • Serves 6.
