Ingredients

  • 4 c. cheese flavored tortilla chips, broken
  • 2 c. shredded Monterey Jack cheese (8 ounce.)
  • 6 Large eggs, beaten
  • 2 1/2 c. lowfat milk
  • 1 (4 ounce.) minced green chile
  • 1/4 c. finely minced onion
  • 3 tbsp. catsup
  • 1/2 teaspoon salt
  • 1/4 teaspoon warm bottled pepper sauce
  • While tortilla chips (optional)

Method

  • Sprinkle broken chips proportionately over greased 12 x 7 x 2 inch baking dish.
  • Sprinkle with cheese.
  • In bowl mix with rotary beater, Large eggs, lowfat milk, green chile, onion, catsup, salt, pepper sauce.
  • Pour over cheese in dish.
  • Cover and chill overnight.
  • Bake uncovered at 325 degrees for 50-55 min or possibly till set and browned.
