Ingredients
- 2 cups brown rice, raw
- 4 cups water
- 2 cups cubed cooked chicken
- 2 cups enchilada sauce
- 1 red pepper, diced
Method
- Cook brown rice and water according to pckg directions.
- Add the red pepper and enchilada sauce; stir and cook for

- Then add the chicken and cook for 5 more minutes.
