Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. chopped green pepper
  • 1 Tbsp. chopped onion
  • 2 c. grated American cheese
  • 2 1/2 c. whole kernel corn
  • 1 egg, well beaten
  • 1 c. Ro-Tel brand tomatoes with chilies
  • 1/2 c. soft bread crumbs
  • 1/2 tsp. salt
  • 1/8 tsp. chili powder

Method

  • Melt butter.
  • Add green pepper and onion.
  • Cook until soft. Add cheese; stir until melted.
  • Mix corn and egg; add to cheese mixture.
  • Add all other ingredients and heat thoroughly.
  • Serve on toast with crisp slices of ham or bacon.
  • Makes 4 to 6 servings.
