Ingredients

  • 1 1/2 lb. ground beef
  • 3/4 c. oatmeal
  • 1 egg
  • 2 tsp. chili powder
  • 2 Tbsp. minced onions
  • dash of salt and pepper
  • 1 (5 1/2 oz.) tomato juice or small can tomato sauce
  • 2 tsp. self-rising flour
  • 2 Tbsp. margarine
  • 1 1/2 c. milk
  • 8 slices American cheese or 1 lb. Velveeta
  • 1 can Mexicorn, drained

Method

  • Combine ground beef, oatmeal, egg, chili powder, onions, salt, pepper and tomato juice or tomato sauce.
  • Put in 9 x 12-inch baking dish and bake at 350° for 20 to 30 minutes.
  • Take out and drain juice.
  • Melt margarine.
  • Add flour to melted margarine in saucepan. Add milk to this mixture.
  • Bring to boil.
  • Add cheese and Mexicorn. When cheese is melted, pour over meat loaf and bake at 350° for 20 to 30 minutes.
