Ingredients

  • 1 lb. ground beef, browned and drained
  • 1 Tbsp. chili powder
  • 1/4 tsp. garlic powder
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 (16 oz.) chopped tomatoes
  • 10 to 12 corn tortillas
  • 2 c. small curd cottage cheese, drained
  • 1 c. grated Monterey Jack cheese
  • 1/2 c. grated Cheddar cheese
  • 2 c. shredded lettuce
  • 3 green onions, chopped
  • 1/4 c. sliced black olives

Method

  • In skillet, combine browned beef and spices with tomatoes in skillet.
  • Heat through.
  • Cover bottom and sides of 13 x 9-inch baking dish with tortillas.
  • Pour beef mixture over tortillas. Place a layer of tortillas over beef mixture.
  • Combine cottage cheese and Jack cheese; pour over tortillas.
  • Bake for 30 minutes in 350° oven.
  • Remove from oven and sprinkle with remaining ingredients over top.
  • Serve with sour cream and salsa if desired.
