Ingredients

  • 1 c. yellow corn meal
  • 2 Tbsp. sugar
  • 1/2 tsp. baking soda
  • 2 eggs, beaten
  • 1/2 c. vegetable oil
  • 1/3 c. chopped onion
  • 1/2 c. shredded cheese
  • 1/3 c. self-rising flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 c. buttermilk
  • 1 can cream-style corn
  • 2 Tbsp. chopped green pepper
  • 1 tsp. red pepper

Method

  • Combine first 6 ingredients, then combine rest of ingredients and stir only until moistened.
  • Pour into greased pan and bake at 350° for 30 to 35 minutes.
