Ingredients

  • 1 lb. ground beef
  • 1 large onion, chopped
  • 3 to 4 jalapeno peppers, chopped
  • 2 eggs, beaten
  • 1 c. corn meal (yellow, plain)
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. milk
  • 1/8 c. oil (Wesson or Crisco)
  • 1 can cream-style corn (medium)
  • 1/2 lb. grated sharp cheese

Method

  • Saute beef, onion and peppers. Drain well and set aside.
  • Mix together corn meal, salt and soda. Add eggs, oil, milk and corn. Grease a large iron skillet (cold).
  • Pour 1/2 of the batter in skillet. Add meat mixture and top with cheese.
  • Pour remaining batter on top. Bake at 350° for 1 hour or until brown on top. (Start in cold oven.)
