Ingredients

  • 1 c. yellow cornmeal
  • 1/3 c. all-purpose flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 beaten eggs
  • 1 c. buttermilk
  • 1/2 c. vegetable oil
  • 1 (8 3/4 oz.) can creamed corn
  • 1/3 c. chopped onion
  • 2 Tbsp. chopped green pepper
  • 1/2 c. shredded Cheddar cheese

Method

  • In bowl, combine first 6 ingredients.
  • Combine remaining ingredients and add to dry ingredients.
  • Stir only until moistened.
  • Pour into greased 9-inch square baking dish or 10-inch heavy skillet.
  • Bake at 350° for 30 to 35 minutes or until golden brown and tests done.
