Ingredients

  • 3/4 c. egg substitute
  • 1 1/2 c. yellow meal
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 c. buttermilk
  • 1 c. grated low-fat Cheddar cheese
  • 1/2 c. vegetable oil
  • 1 can chili peppers, drained and chopped
  • 1 can cream-style corn
  • 3 slices crisp turkey bacon, crumbled
  • 1 tsp. chopped onion

Method

  • Mix all ingredients together except cheese.
  • Pour half batter in hot greased skillet; sprinkle grated cheese over batter.
  • Pour in remaining batter.
  • Bake at 400° until done, approximately 30 minutes.
