- 3/4 c. egg substitute
- 1 1/2 c. yellow meal
- 3 tsp. baking powder
- 1 tsp. salt
- 1 c. buttermilk
- 1 c. grated low-fat Cheddar cheese
- 1/2 c. vegetable oil
- 1 can chili peppers, drained and chopped
- 1 can cream-style corn
- 3 slices crisp turkey bacon, crumbled
- 1 tsp. chopped onion
Method
- Mix all ingredients together except cheese.
- Pour half batter in hot greased skillet; sprinkle grated cheese over batter.
- Pour in remaining batter.
- Bake at 400° until done, approximately 30 minutes.
