Ingredients

  • 2 1/2 c. cornmeal
  • 1 c. flour
  • 1/2 c. dry milk
  • 4 tsp. baking powder
  • 1 Tbsp. salt
  • 2 Tbsp. sugar
  • 3 eggs (room temperature)
  • 1 1/2 c. warm water
  • 1/2 c. corn oil
  • 1 can creamed corn
  • 6 to 8 fresh jalapeno peppers, chopped
  • 1 onion, chopped
  • 2 c. sharp cheese, grated

Method

  • Mix corn meal, flour, dry milk, baking powder, salt and sugar. Add eggs, warm water and corn oil. Add cream cheese, jalapeno peppers, onion and cheese. Cook at 425° for 30 minutes in 2 well-greased pans.
