- 4 to 6 chicken breasts
- 1 large can chili without beans
- 1 can cream of chicken soup
- 1 large can enchilada sauce
- 1 medium onion, chopped
- 1/2 lb. Jack cheese, shredded
- 1/2 lb. Cheddar cheese, shredded
- 1 pkg. corn tortillas, cut into pieces
Method
- Boil, skin and bone chicken.
- Chop.
- Save broth.
- Mix all ingredients except cheeses, tortillas and chicken.
- Add 3/4 cup chicken broth.
