Ingredients
- 1 chicken, boiled and boned
- 1 onion
- 3/4 lb. Velveeta cheese, sliced
- 1 large bag plain tortilla chips
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can Ro-Tel diced tomatoes with green chilies
Method
- Spread cooked chicken pieces in
- large casserole dish.
- Salt and pepper.
- Place sliced cheese over chicken and onion. Crumble 6 ounces of chips over cheese. Blend Ro-Tel and cream soups and pour over casserole.
- Crumble 6 ounces tortilla chips over mixture. Bake at 350° for 30 minutes, covered with foil. Bake another 15 minutes, uncovered.
