Ingredients

  • 1 chicken, boiled and boned
  • 1 onion
  • 3/4 lb. Velveeta cheese, sliced
  • 1 large bag plain tortilla chips
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can Ro-Tel diced tomatoes with green chilies

Method

  • Spread cooked chicken pieces in
  • large casserole dish.
  • Salt and pepper.
  • Place sliced cheese over chicken and onion. Crumble 6 ounces of chips over cheese. Blend Ro-Tel and cream soups and pour over casserole.
  • Crumble 6 ounces tortilla chips over mixture. Bake at 350° for 30 minutes, covered with foil. Bake another 15 minutes, uncovered.
