- 1 Tbsp. olive oil
- 1 lb. boneless, skinless chicken breast, cut into cubes
- 1 c. chicken broth
- 1 (4 oz.) can chopped green chilies
- 1 1/2 tsp. California Style Blend garlic powder
- 1 1/2 tsp. ground cumin
- 1 tsp. oregano leaves
- 1 tsp. chili powder
- 1 (15 oz.) can red kidney beans (undrained)
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (16 oz.) can whole kernel corn, drained
- 1/2 c. sliced green onion
Method
- Heat oil in large skillet over medium-high heat.
- Add chicken and cook 4 to 5 minutes, stirring often.
- Remove chicken and set aside.
- Add remaining ingredients except onion to skillet; mix well.
- Bring to a boil; reduce heat to medium and cook 10 minutes. Stir in cooked chicken and onion; simmer 5 to 10 minutes.
- If desired, serve with tortilla chips or corn bread.
- Makes 6 servings.
