Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. boneless, skinless chicken breast, cut into cubes
  • 1 c. chicken broth
  • 1 (4 oz.) can chopped green chilies
  • 1 1/2 tsp. California Style Blend garlic powder
  • 1 1/2 tsp. ground cumin
  • 1 tsp. oregano leaves
  • 1 tsp. chili powder
  • 1 (15 oz.) can red kidney beans (undrained)
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (16 oz.) can whole kernel corn, drained
  • 1/2 c. sliced green onion

Method

  • Heat oil in large skillet over medium-high heat.
  • Add chicken and cook 4 to 5 minutes, stirring often.
  • Remove chicken and set aside.
  • Add remaining ingredients except onion to skillet; mix well.
  • Bring to a boil; reduce heat to medium and cook 10 minutes. Stir in cooked chicken and onion; simmer 5 to 10 minutes.
  • If desired, serve with tortilla chips or corn bread.
  • Makes 6 servings.
