Ingredients

  • 2 sheets aluminum foil
  • 2 boneless skinless chicken breast halves
  • 1/2 cup green chili salsa
  • 2/3 cup refried beans
  • 1/4 cup shredded cheddar cheese
  • 2 romaine lettuce leaves

Method

  • PREHEAT oven to 450°F or grill to medium-high.
  • CENTER one chicken breast half on each sheet of tin foil. Spoon salsa over chicken; top with beans.
  • BRING up foil sides. Double fold top and ends to make airtight packet, leaving room for heat circulation inside. (think your old girl scout days). Repeat to make two packets.
  • BAKE 15 to 18 minutes on a cookie sheet in oven OR GRILL 11 to 13 minutes in covered grill; sprinkle with cheese before serving.
  • Serve on romaine leaves.
