Ingredients

  • 1 lb. ground beef
  • 1 (1 1/4 oz.) pkg. taco seasoning
  • 1 (14 1/2 oz.) can whole tomatoes, chopped and undrained
  • 1 (8 1/2 oz.) can whole kernel corn, drained
  • 1 egg
  • 2/3 c. milk
  • 1 pkg. Mexican cornbread mix (Martha White)
  • 1 c. grated cheese

Method

  • Preheat oven to 400°.
  • Grease a shallow 2-quart baking dish. Brown ground beef in a large skillet; drain.
  • Return to skillet; add taco seasoning, tomatoes and corn.
  • Bring mixture to a boil over medium heat, stirring occasionally.
  • Pour mixture into a baking dish.
  • Cover with cheese.
  • Mix egg, milk and cornbread mix. Pour over mixture.
  • Bake at 400° for 25 to 30 minutes or until golden brown.
  • Cool 10 minutes before serving.
