Ingredients
- 1 lb. ground beef
- 1 (1 1/4 oz.) pkg. taco seasoning
- 1 (14 1/2 oz.) can whole tomatoes, chopped and undrained
- 1 (8 1/2 oz.) can whole kernel corn, drained
- 1 egg
- 2/3 c. milk
- 1 pkg. Mexican cornbread mix (Martha White)
- 1 c. grated cheese
Method
- Preheat oven to 400°.
- Grease a shallow 2-quart baking dish. Brown ground beef in a large skillet; drain.
- Return to skillet; add taco seasoning, tomatoes and corn.
- Bring mixture to a boil over medium heat, stirring occasionally.
- Pour mixture into a baking dish.
- Cover with cheese.
- Mix egg, milk and cornbread mix. Pour over mixture.
- Bake at 400° for 25 to 30 minutes or until golden brown.
- Cool 10 minutes before serving.
