Ingredients

  • 1 1/2 c. sugar (white)
  • 1 c. shortening
  • 2 eggs
  • 3 1/4 c. flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. cloves
  • 1/2 tsp. salt
  • 1 1/2 c. chopped nuts
  • 1 1/2 c. raisins
  • 1 1/2 c. coarsely chopped dates
  • 1/2 c. coarsely chopped red maraschino cherries
  • 2 c. applesauce
  • 6 red maraschino cherries, halved
  • 6 pecans, halved

Method

  • Heat oven to 325°.
  • Grease 10-inch tube pan.
  • Line bottom with wax paper and grease again.
  • In large bowl, beat sugar and shortening until light and fluffy.
  • Add eggs; blend well.
  • Reserve 1/2 cup flour.
  • Add remaining 2 3/4 cups flour, soda and spices to egg mixture.
  • Blend on low speed until moistened.
  • Beat 2 minutes on medium speed.
  • Combine reserved flour, nuts, raisins and dates until lightly coated.
  • By hand, stir fruit and nut mixture and applesauce into batter.
  • Mix well.
  • Pour batter into greased and lined tube pan.
  • Top with cherry and pecan halves.
  • Bake at 325° for 1 1/4 to 1 3/4 hours or until toothpick inserted in center comes out clean.
  • Cool in pan upright 5 minutes.
  • Remove from pan and remove wax paper.
  • Turn upright and cool completely on wire rack.
  • Wrap in foil or plastic to keep moist.
  • Store in refrigerator.
  • Serves 20.
