Ingredients

  • 1 c. butter (softened at room temperature)
  • 3 c. sugar
  • 1 tsp. vanilla extract
  • 3 c. flour, sifted with 1/4 tsp. baking soda
  • 1 c. sour cream
  • 6 eggs (at room temperature)
  • 1/2 tsp. lemon extract

Method

  • Thoroughly cream butter and sugar.
  • Add extracts.
  • Add eggs, one at a time.
  • Beat well.
  • On low speed, stir in the sifted flour and soda mixture.
  • Add sour cream and stir to combine.
  • Using a tube pan or three loaf pans, cut wax paper to fit the bottom of pan or pans.
  • Spray pans well with cooking oil and line with paper.
  • Place the cake in the middle of the oven with a pan of hot water on the bottom rack of oven, which should be heated to 300°. Bake until cake tests done, about 1 1/2 hours or a little longer, about 1 hour and 15 minutes for loaf pans.
