Ingredients
- 1 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 1 egg
- 1/3 c. milk
- 1 Tbsp. melted shortening
- 1 (12 oz.) can drained whole kernel corn
- shortening for frying
Method
- Sift the flour; measure and resift with the baking powder, salt and sugar.
- Beat egg, then add milk and shortening, then flour mixture and beat until smooth.
- Fold in corn and let stand 5 to 10 minutes while you heat shortening.
- Fry at 360° and serve hot.
