Ingredients

  • 4 or 5 medium Irish potatoes
  • 1 medium onion, chopped
  • salt and pepper
  • 1 c. sharp Cheddar cheese, grated
  • 1/2 pt. whipping cream

Method

  • Boil unpeeled potatoes in unsalted water until tender.
  • Allow potatoes to cool, then peel and grate on the coarse side of a box-type grater (do not slice).
  • In a greased 2-quart baking dish, make a layer of 1/2 the potatoes and 1/2 the onion, then salt and pepper.
  • Repeat with remaining potatoes and onion.
  • Salt and pepper again, fairly heavily.
  • Sprinkle cheese evenly over the top; pour cream over all as evenly as possible.
  • Cover with aluminum foil; bake at 350° for 45 minutes.
  • Serves 4.
