Ingredients
- 4 or 5 medium Irish potatoes
- 1 medium onion, chopped
- salt and pepper
- 1 c. sharp Cheddar cheese, grated
- 1/2 pt. whipping cream
Method
- Boil unpeeled potatoes in unsalted water until tender.
- Allow potatoes to cool, then peel and grate on the coarse side of a box-type grater (do not slice).
- In a greased 2-quart baking dish, make a layer of 1/2 the potatoes and 1/2 the onion, then salt and pepper.
- Repeat with remaining potatoes and onion.
- Salt and pepper again, fairly heavily.
- Sprinkle cheese evenly over the top; pour cream over all as evenly as possible.
- Cover with aluminum foil; bake at 350° for 45 minutes.
- Serves 4.
