Ingredients
- 3 c. asparagus, trimmed and cut into 1 1/2 in. pieces
- 6 oz feta
- 2 Tbsp olive oil
- 1 Tbsp spicy brown mustard
- 6 cloves garlic minced
- 2 Tbsp lemon juice
- 2 tsp lemon zest
- 5 c orzo (12 oz box)
- Salt and pepper to taste
- Basil maybe
Method
- Marinade: Blend garlic, zest. mustard & lemon juice with hand blender. Add olive oil and blend well. Pour in Ziploc and add asparagus.
- Cook orzo to al dente. Drain.
- Grill asparagus. Toss with feta and orzo.
- Maybe save some dressing to toss in.
