Ingredients

  • 3 c. asparagus, trimmed and cut into 1 1/2 in. pieces
  • 6 oz feta
  • 2 Tbsp olive oil
  • 1 Tbsp spicy brown mustard
  • 6 cloves garlic minced
  • 2 Tbsp lemon juice
  • 2 tsp lemon zest
  • 5 c orzo (12 oz box)
  • Salt and pepper to taste
  • Basil maybe

Method

  • Marinade: Blend garlic, zest. mustard & lemon juice with hand blender. Add olive oil and blend well. Pour in Ziploc and add asparagus.
  • Cook orzo to al dente. Drain.
  • Grill asparagus. Toss with feta and orzo.
  • Maybe save some dressing to toss in.
