- 1 2/3 to 1 3/4 lbs ground sirloin
- 1 medium onion, chunked
- 2 ribs of celery heart, cut into 2" pieces
- 1 green bell pepper
- 1 large egg plus splash of milk, beaten
- 1 cup plain bread crumbs
- 2 T grill seasoning
- 1 cup smoky barbeque sauce
- 1/2 cup tomato salsa
- 1 T Worchestershire sauce
- Vegetable oil or Extra Virgin Olive oil
Method
- Preheat oven to 450
- Place sirloin in big bowl
- Put onion and celery into food processor. Remove seeds from pepper, cut up and then add to processor. Pulse blades to finely chop vegetables.
- Add to meat bowl
- Add egg beaten with milk, bread crumbs and grill seasoning to meat bowl.
- Mix barbeque sauce, salsa and Worchestershire sauce. Pour half of sauce mixture into the bowl. Mix with hands
- Brush 12 muffin pan with oil.
- Fill each with meat mixture. Top with a spoonful of remaining sauce.
- Bake about 20 minutes. (cut open 1 muffin to test that the middle is cooked through)
