- 1/4 lb. mushrooms, sliced or 1 (4 oz.) can, drained
- 2 Tbsp. butter or margarine
- 2 c. beef broth
- 1 lb. ground beef
- 2 Tbsp. cold water
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. broken spaghetti
- 3 c. broccoli, chopped (florets and stems; 1/2 bunch)
- Parmesan cheese
Method
- Saute mushrooms in butter until golden. Add broth and bring to a boil. Combine beef, water, salt and pepper.
- Shape in walnut size meatballs and drop into simmering broth; simmer 10 minutes. Stir in spaghetti. Cover and cook 10 minutes. Add broccoli. Cover and cook 10 minutes or until tender. Sprinkle with Parmesan.
