Ingredients

  • 2 small cloves garlic
  • 1 medium onion
  • 6 Tbsp. olive oil
  • 16 oz. can tomato sauce
  • 12 oz. water
  • 1 (28 oz.) can tomatoes
  • 1/4 tsp. oregano
  • 2 bay leaves to taste
  • 1 Tbsp. sugar
  • salt and pepper
  • 2 lb. pork bones
  • 1 lb. piece pork
  • 2 lb. ground chuck

Method

  • Chop garlic and onion very fine.
  • Saute in little oil until golden brown.
  • Add tomato paste and water and simmer 2 minutes. Then add tomatoes, oregano, bay leaves, sugar, salt and pepper. In a separate pan braise pork bones and pork for 15 minutes.
  • Then add them to tomato sauce.
  • Let everything cook uncovered for 1 1/2 hours at a simmer.
  • Brown the ground chuck in oil.
  • Drain off fat and add meat to the sauce.
  • Cook the sauce an additional 45 minutes, skimming off the grease.
  • Cook pasta.
