Ingredients

  • 6 large potatoes, pared and chunked
  • 1 head garlic, peeled
  • 3 tablespoons butter
  • 1 tablespoon flour
  • 12 cup cream
  • 1 teaspoon salt
  • 12 teaspoon pepper
  • 1 tablespoon butter

Method

  • Boil potatoes.
  • Drain and mash.
  • Simmer garlic in butter in a covered saucepan for 20 minutes.
  • Beat in flour.
  • Whisk in cream and seasonings.
  • Bring to a boil.
  • Cook one minute.
  • Puree garlic mixture.
  • Add to potatoes.
  • Add extra tbsp butter
  • Serve or.
  • This can be whipped and pressed out of a large tip decorator in a design.
  • Brush with beaten egg
  • Broil before serving.
