Ingredients

  • 1 medium cauliflower, trimmed and cut into small florets (6 or 7 cups)
  • 1 dash sea salt
  • 1 dash ground black pepper
  • 1 dash of chives is optional grated quality cheddar cheese (optional) or 1 dash parmesan cheese (optional) or 1 dash manchego cheese, is (optional)

Method

  • Place cauliflower florets in a steamer basket over boiling water, cover and steam until very tender, 12 to 15 minutes.
  • Place the cooked cauliflower in a food processor.
  • Add salt & pepper; pulse several times, then process until smooth and creamy.
  • Transfer to a serving bowl and garnish with chives &/or optional cheese sprinkles.
  • Serve hot.
