Ingredients
- 1 slightly beaten egg
- 1 1/4 c. milk
- 2/3 c. fine cracker crumbs
- 1/2 tsp. salt
- 4 chicken legs or 4 thighs
- 3 to 4 Tbsp. shortening
Method
- Combine eggs and 1/4 cup of the milk.
- Mix cracker crumbs, salt and dash of pepper.
- Dip legs into egg mixture, then roll in crumbs.
- In heavy skillet, brown chicken in hot shortening.
- Turn with tongs.
- Add remaining 1 cup milk.
- Cover tightly and simmer 35 minutes.
- Uncover and cook about 10 minutes or until tender.
