Ingredients

  • 1 young fryer (3 to 3 1/2 lb.)
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1 c. water
  • 1/2 c. flour
  • 1/2 tsp. pepper
  • 2/3 c. fat

Method

  • Quarter chicken, wash and clean. Dry well.
  • Dip in mixture of flour, salt, pepper and paprika.
  • Place in hot fat in a heavy skillet.
  • Brown all sides.
  • Allow 15 minutes each side.
  • Reduce heat.
  • Cover and simmer 15 to 20 minutes.
  • Remove from pan.
  • Add 2 to 3 tablespoons flour and brown.
  • Add 1 cup water.
  • Mix well. Place chicken in gravy and simmer another 15 minutes.
  • Serve with potatoes or rice, hot biscuits and jelly or honey.
  • Serves 6.
