Ingredients
- 1 young fryer (3 to 3 1/2 lb.)
- 1 tsp. salt
- 1/2 tsp. paprika
- 1 c. water
- 1/2 c. flour
- 1/2 tsp. pepper
- 2/3 c. fat
Method
- Quarter chicken, wash and clean. Dry well.
- Dip in mixture of flour, salt, pepper and paprika.
- Place in hot fat in a heavy skillet.
- Brown all sides.
- Allow 15 minutes each side.
- Reduce heat.
- Cover and simmer 15 to 20 minutes.
- Remove from pan.
- Add 2 to 3 tablespoons flour and brown.
- Add 1 cup water.
- Mix well. Place chicken in gravy and simmer another 15 minutes.
- Serve with potatoes or rice, hot biscuits and jelly or honey.
- Serves 6.
