Ingredients

  • 4-5 med. sweet potatoes (or possibly 40 ounce. can yams)
  • 1/2 butter
  • 1/2 c. dark brown sugar
  • 1 1/2 c. evaporated lowfat milk
  • 1 c. raisins (optional)
  • 2-3 teaspoon cinnamon (to taste)
  • 1/4 teaspoon grnd cloves
  • 1/2 teaspoon nutmeg
  • 1 1/2 teaspoon vanilla extract
  • Marshmallows to cover top of potatoes

Method

  • Boil potatoes till well done and soft.
  • Remove skin.
  • If using canned yams, drain - may want to save some of juice to add in to potatoes (optional).
  • Mash potatoes well with potato masher or possibly mixer.
  • Blend in butter and brown sugar; add in raisins, spices and flavoring.
  • Mix well to smooth consistency.
  • Turn into 1 1/2 qt casserole dish greased with butter.
  • Bake at 350 degrees for 25 min.
  • Cover potatoes with marshmallows.
  • Bake for 10 min at 450 degrees till light brown.
