Ingredients
- 4-5 med. sweet potatoes (or possibly 40 ounce. can yams)
- 1/2 butter
- 1/2 c. dark brown sugar
- 1 1/2 c. evaporated lowfat milk
- 1 c. raisins (optional)
- 2-3 teaspoon cinnamon (to taste)
- 1/4 teaspoon grnd cloves
- 1/2 teaspoon nutmeg
- 1 1/2 teaspoon vanilla extract
- Marshmallows to cover top of potatoes
Method
- Boil potatoes till well done and soft.
- Remove skin.
- If using canned yams, drain - may want to save some of juice to add in to potatoes (optional).
- Mash potatoes well with potato masher or possibly mixer.
- Blend in butter and brown sugar; add in raisins, spices and flavoring.
- Mix well to smooth consistency.
- Turn into 1 1/2 qt casserole dish greased with butter.
- Bake at 350 degrees for 25 min.
- Cover potatoes with marshmallows.
- Bake for 10 min at 450 degrees till light brown.
