Ingredients

  • 5 pounds oxtails
  • 2 tablespoons of vinegar
  • 5 cloves of garlic
  • scotch bonnet pepper
  • 3 stalks of scallions
  • 3 sprigs of thyme
  • 1 small onion
  • 1 small tomato
  • 1/2 bunch cilantro
  • Salt and ground pepper
  • 3 tablespoons of vegetable oil
  • 3 tablespoons of sugar
  • red beans and rice or white rice for serving
  • cabbage
  • ketchup
  • julienned red pepper
  • shredded carrot

Method

  • Combine garlic, scallions, thyme, onion, cilantro and salt and pepper in a food processor or blender. Rub the paste into the oxtails and marinate overnight in the refrigerator.
  • Place the oxtails in a pressure cooker for about 45-60 minutes (look at manufactures directions)
  • Heat the oil in heavy skillet. Add sugar and let it melt til brown color. Add oxtails shredded cabbage, red peppers, carrots and ketchup and let cook 20 minutes. Salt to taste. Serve with rice
