- 1 large vidalia onion, sliced thin
- 4 medium tomatoes, chunked
- 2 medium yellow or bell peppers, chopped
- 1 medium cucumber, sliced
- 2 c broccoli, chopped
- 1 c cauliflower, chopped
- 1/4 c italian parsley
- 1/4 c white wine vinegar
- 3/4 c extra virgin olive oil
- 2 T sugar
- salt and pepper to taste
Method
- Combine first seven ingredients in a glass bowl.
- Combine the last four ingredients mixing well, pour over vegetables and marinate at least 2 hours or overnight.
- If you like you can use your favorite bottled Italian dressing in place of dressing in recipe.
