Ingredients

  • 1 large vidalia onion, sliced thin
  • 4 medium tomatoes, chunked
  • 2 medium yellow or bell peppers, chopped
  • 1 medium cucumber, sliced
  • 2 c broccoli, chopped
  • 1 c cauliflower, chopped
  • 1/4 c italian parsley
  • 1/4 c white wine vinegar
  • 3/4 c extra virgin olive oil
  • 2 T sugar
  • salt and pepper to taste

Method

  • Combine first seven ingredients in a glass bowl.
  • Combine the last four ingredients mixing well, pour over vegetables and marinate at least 2 hours or overnight.
  • If you like you can use your favorite bottled Italian dressing in place of dressing in recipe.
