Ingredients
- 4 medium tomatoes, peeled and chopped
- 1/4 c. snipped parsley
- 2 Tbsp. olive oil
- 2 cloves garlic
- 1 1/2 tsp. dried basil, crushed
- dash of pepper
- 8 oz. packaged spinach or plain fettuccine
Method
- Toss together the chopped tomatoes, parsley, olive oil, garlic, basil and pepper; cover and refrigerate for 2 to 3 hours. Cook fettuccine in boiling water until al dente; drain.
- Gently toss tomato mixture with fettuccine until well combined.
- Makes 8 side-dish servings.
