Ingredients

  • 2 cans diced or crushed tomatoes (unseasoned)
  • 1 (8 oz.) pkg. mushrooms, quartered
  • 1 to 2 large garlic cloves, peeled and crushed
  • 2 tsp. dried rosemary
  • 3 tsp. dried basil
  • 2 tsp. oregano
  • 1 Tbsp. olive oil
  • 1 to 2 Tbsp. butter
  • 1 to 2 Tbsp. sugar
  • 1 Tbsp. cornstarch, mixed with 3 Tbsp. water
  • lemon juice (optional)
  • 1 boneless, skinless chicken breast, sliced (optional)

Method

  • Place all ingredients, except cornstarch mixture, sugar, lemon juice and chicken, in pan.
  • Simmer 10 to 15 minutes.
  • Taste sauce and adjust seasonings.
  • Add sugar to taste.
  • Lemon juice adds a nice zip.
  • Add cornstarch mixture gradually until sauce reaches desired thickness.
  • Serve over pasta or rice.
