- 2 cans diced or crushed tomatoes (unseasoned)
- 1 (8 oz.) pkg. mushrooms, quartered
- 1 to 2 large garlic cloves, peeled and crushed
- 2 tsp. dried rosemary
- 3 tsp. dried basil
- 2 tsp. oregano
- 1 Tbsp. olive oil
- 1 to 2 Tbsp. butter
- 1 to 2 Tbsp. sugar
- 1 Tbsp. cornstarch, mixed with 3 Tbsp. water
- lemon juice (optional)
- 1 boneless, skinless chicken breast, sliced (optional)
Method
- Place all ingredients, except cornstarch mixture, sugar, lemon juice and chicken, in pan.
- Simmer 10 to 15 minutes.
- Taste sauce and adjust seasonings.
- Add sugar to taste.
- Lemon juice adds a nice zip.
- Add cornstarch mixture gradually until sauce reaches desired thickness.
- Serve over pasta or rice.
