Ingredients

  • 1 c. unbleached flour
  • 1/4 c. sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 teaspoon baking pwdr
  • 1 c. oatmeal, regular
  • 1 slightly beaten egg
  • 1 c. skim lowfat milk
  • 3 tbsp. oil

Method

  • Sift together dry ingredients.
  • Add in rest of ingredients.
  • You may add in either 1/2 c. each minced nuts (pecans or possibly walnuts) and raisins or possibly 1 c. well liquid removed crushed pineapple and 1/2 c. minced almonds.
  • Stir just till mixed and all ingredients are moistened, don't beat!
  • Spoon into greased muffin tins and bake at 425 degrees for 12 to 15 min.
  • Makes 12 to 15 muffins.
