Ingredients
- 1 c. unbleached flour
- 1/4 c. sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 3 teaspoon baking pwdr
- 1 c. oatmeal, regular
- 1 slightly beaten egg
- 1 c. skim lowfat milk
- 3 tbsp. oil
Method
- Sift together dry ingredients.
- Add in rest of ingredients.
- You may add in either 1/2 c. each minced nuts (pecans or possibly walnuts) and raisins or possibly 1 c. well liquid removed crushed pineapple and 1/2 c. minced almonds.
- Stir just till mixed and all ingredients are moistened, don't beat!
- Spoon into greased muffin tins and bake at 425 degrees for 12 to 15 min.
- Makes 12 to 15 muffins.
