- 2 1/4 c. cake flour
- 3 tsp. double-acting baking powder
- 1 1/3 c. sugar
- 1/2 tsp. salt
- 1/2 c. shortening
- 1/4 c. maraschino cherry juice
- 16 maraschino cherries, cut in eighths
- 1 c. milk
Method
- Sift together cake flour, baking powder, sugar and salt.
- Add shortening, cherry juice, cherries and milk.
- Beat 2 minutes by clock.
- Add 1/2 to 2/3 cup unbeaten egg whites (4 large eggs). Beat 2 more minutes.
- Pour batter into two 9-inch cake pans.
- Bake 30 to 35 minutes at 350°.
