Ingredients

  • 2 1/4 c. cake flour
  • 3 tsp. double-acting baking powder
  • 1 1/3 c. sugar
  • 1/2 tsp. salt
  • 1/2 c. shortening
  • 1/4 c. maraschino cherry juice
  • 16 maraschino cherries, cut in eighths
  • 1 c. milk

Method

  • Sift together cake flour, baking powder, sugar and salt.
  • Add shortening, cherry juice, cherries and milk.
  • Beat 2 minutes by clock.
  • Add 1/2 to 2/3 cup unbeaten egg whites (4 large eggs). Beat 2 more minutes.
  • Pour batter into two 9-inch cake pans.
  • Bake 30 to 35 minutes at 350°.
