Ingredients

  • 2 acorn squash
  • 2 T. butter
  • 3 T. maple syrup
  • 1/4 t. cinnamon
  • salt and pepper

Method

  • Preheat oven to 425. Cut each squash in 1/2. Remove stems. Put squash into 2 casserole dishes. Pour about a 1/2" water into the dishes and sprinkle the squash with salt and pepper. Bake for 15-20 minutes. While squash is cooking, melt butter and combine it with maple syrup and cinnamon. Remove squash from oven, pour off water, and brush with syrup mixture. Bake 5 minutes more, brush with more syrup mixture, then bake 5 minutes more.
