Ingredients

  • 1 lb. box manicotti shells
  • 2 lb. Ricotta cheese
  • 1/2 lb. Mozzarella cheese
  • 1/2 c. grated Parmesan cheese
  • 1 (2 lb.) jar spaghetti sauce
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. parsley flakes
  • 1/8 tsp. pepper

Method

  • Cook manicotti shells in 4 quarts boiling salted water for 15 minutes, stirring occasionally.
  • Drain.
  • Mix remaining ingredients (less the manicotti shells and spaghetti sauce) in a large mixing bowl.
  • Stuff each shell with 1/3 to 1/2 cup filling.
  • Pour enough spaghetti sauce to cover bottom of 3-quart baking dish.
  • Lay shells side by side.
  • Pour remaining sauce over the shells. Sprinkle the top with Parmesan cheese, if desired and bake at 350° for 40 minutes.
  • Serve hot.
