Ingredients

  • 2 1/2 cups coarsely grated carrots
  • 2 large granny smith apples
  • 1/2 cup sour cream
  • 2 -3 tablespoons drained prepared horseradish, from the bottle
  • 2 tablespoons finely chopped fresh fresh parsley leaves
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon sugar

Method

  • In a bowl, stir together the prepared carrots, peeled and grated apples, and sour cream and horseradish.
  • Add parsely, lemon juice, and sugar.
  • Salt and pepper to taste.
  • chill salad for an hour or until cold.
