Ingredients
- 1/2 cup sugar
- 1/2 cup water
- 2 pounds mango ripe fresh
- 3 tablespoons lime juice freshly squeezed
- 2/3 cup coconut milk
Method
- In a medium saucepan, combine the sugar & water, bring to a boil while stirring and cook until the liquid is clear and the sugar is dissolved.
- Place the pan in an ice bath and stirring constantly, until it cools to room temperature.
- Peel, seed & dice the mangoes and puree them in a food processor with the juice & syrup. Transfer to a container and stir in the coconut milk. Cover& refrigerate until cold- 2-3 hours
- Freeze in an ice cream maker according to the manufacturers instructions. Transfer to a a container and freeze until firm.
