Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 each green,red,yellow peppers
  • 3 green onions
  • 2 mangos
  • 2/3 cup of chicken stock
  • 3 tablespoons of sugar
  • 2tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 4 teaspoons curry paste
  • 4 tablespoons vegetable oil
  • 1 tablespoon minced ginger
  • 1 tablespoon minced ginger

Method

  • cut chicken into 4 inch pieces
  • cut onions, peppers,amd mangos into 1 inch pieces
  • whisk together stock,sugar,soy sauce,vinegar,cornstarch,and curry paste
  • stir fry chicken until no longer pink
  • transfer chicken to a plate
  • add remaining oil and stir fry peppers and onions about 2 mins
  • stir in ginger and garlic cook 30 sec
  • add stock mixture and chicken cook stirring for 2 min or until sauce thickens and chicken is hot
  • stir in mangos
