- 1 lb boneless skinless chicken breasts
- 1 each green,red,yellow peppers
- 3 green onions
- 2 mangos
- 2/3 cup of chicken stock
- 3 tablespoons of sugar
- 2tablespoons soy sauce
- 2 tablespoons rice vinegar
- 4 teaspoons curry paste
- 4 tablespoons vegetable oil
- 1 tablespoon minced ginger
- 1 tablespoon minced ginger
Method
- cut chicken into 4 inch pieces
- cut onions, peppers,amd mangos into 1 inch pieces
- whisk together stock,sugar,soy sauce,vinegar,cornstarch,and curry paste
- stir fry chicken until no longer pink
- transfer chicken to a plate
- add remaining oil and stir fry peppers and onions about 2 mins
- stir in ginger and garlic cook 30 sec
- add stock mixture and chicken cook stirring for 2 min or until sauce thickens and chicken is hot
- stir in mangos
