Ingredients
- 3 cups All-purpose Flour
- 1/4 cups Sugar
- 3/4 teaspoons Salt
- 1 whole Lemon (just The Zest)
- 1/4 ounces, weight Yeast
- 1/4 cups Warm Water
- 4 whole Eggs
- 1 cup Whole Milk [or 1/2 Cup Evaporated Milk]
- 2 Tablespoons Oil
- Oil For Deep Frying
- 1/2 cups Sugar For Sprinkling
Method
- Sift together the flour, sugar, salt and the zest of one lemon.
- Dissolve yeast in warm water
- In a small bowl, combine: the eggs, milk and oil. Add this mixture to the dry ingredients and then add the yeast, mixing well.
- The dough will be wet and batter-like. Place the dough in a well oiled bowl and cover with a damp cloth. Let rise until it doubles in size.
- Heat oil for deep frying. Drop dough balls into the hot oil by the teaspoonful, until brown.
- To test for doneness: Using a toothpick or a skewer, insert into the center. It should come out clean when fully cooked.
- When brown, pull the doughnuts out of the oil and drain on a paper towel.
- Put about 1/2 cup of sugar in a brown paper bag. While the donuts are still warm, place them into the brown paper bag and shake to coat the doughnuts.
- Dive in!
