Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk
  • 1 garlic clove, minced (about 1 tsp)
  • 2 cups extra-sharp cheddar cheese, grated
  • 1 pinch cayenne pepper
  • 2 egg yolks
  • 1 12 cups breadcrumbs

Method

  • Preheat oven to 350 degrees Fahrenheit.
  • Boil cauliflower until tender, 5 to 7 minutes.
  • Drain cauliflower, reserving 1 cup of the cooking liquid.
  • Set aside.
  • Over medium heat, in the same pot you cooked the cauliflower in, melt the butter.
  • Whisk in flour.
  • Cook 1 minute, stirring constantly.
  • Whisk is milk, minced garlic and reserved cooking liquid.
  • Cook 7 to 10 minutes or until sauce is thickened, whisking constantly.
  • Remove from heat and stir in cheddar cheese, cayenne pepper, and egg yolks until cheese is melted.
  • Combine cauliflower and cheese sauce.
  • Spray a 13x9 cooking dish with non stick spray.
  • Pour cauliflower mixture into dish.
  • Sprinkle with breadcrumbs.
  • Spray breadcrumbs with cooking spray.
  • Bake for 30 minutes.
